Finally summer has arrived!! Enjoy it while it lasts, get out and get yourself some Vitamin D the old fashion way. Scientific evidence shows vitamin D may go beyond its traditionally known role in maintaining bone integrity, according to new research presented at the Institute of Food Technologists Annual Meeting and Food Expo® earlier this month. It may play a role in preventing autoimmune diseases or over-acid tissue conditions such as multiple sclerosis and rheumatoid arthritis, some types of cancerous conditions such as breast, ovarian, colorectal and prostate. Good food sources are cod liver oil, salmon, mackerel, tuna, sardines and fortified cereals.
Ingredients -
1 pound baked potatoes, cooked, peeled and grated (a food mill works best)
4 ounces diced smoked salmon
1 tablespoon chopped, fresh chives
½ teaspoon sea salt
¼ teaspoon freshly ground pepper
1 chopped scallion
a bit of olive oil
Directions
Combine all ingredients. Form into 2 ounce size patties and brown on an oiled griddle.
Finish in low-heat oven till heated through. Garnish with chopped green onions
